Is it possible to loosen upper body so the doors come down and fit flush when closed?

No! This is a common problem on GTIIs and is caused by the body itself sagging in the rear and throwing the doors out of alinement. This is usually referred to as Butt Sag. There are several prior threads and posts on this subject in this forum. It must be corrected by slowly raising the rear end and adding support braces.
Do a search for butt sag to see all the discussions about it.
